Watermelon Lychee Lime Slushie

Instructions

For the lime syrup (~1 cup / 250 ml)(see Chef’s Tips):

Step 1

In a medium, heavy-bottomed saucepan, combine the Redpath Simply Raw™ Turbinado Sugar, water, strips of lime zest, and salt over medium-high heat. Stir until sugar is completely dissolved. Remove from heat.

Step 2

Stir in the lime juice. Cover and cool to room temperature; about 10 minutes.

Step 3

Strain through sieve into an airtight container, discard zest, and place in fridge to chill completely; at least 30 minutes.

For the watermelon slushie:

Step 1

Place cubed, fresh and frozen watermelon and half (approximately ½ cup / 125 ml) of the chilled lime simple syrup into a blender. Pulse until smooth, occasionally scraping down the sides.

Step 2

Divide half of the watermelon slush evenly into 4 to 6 glasses. Transfer the remaining slush into a freezer-safe container. Place container and glasses into the freezer until ready to serve.

Step 3

Rinse blender.

For the lychee slushie:

Step 1

Place the ice cubes and remaining lime simple syrup (see Chef’s Tips) into the rinsed blender. Pulse to roughly chop.

Step 2

Add in lychee and pulse until smooth.

Step 3

Carefully spoon the lychee slush over the watermelon slush. If pouring, pour the lychee slush over the back of a spoon to prevent the layers from mixing. Top each lychee layer with the remaining watermelon slush using the same method.

Step 4

Garnish if desired. Serve immediately.
