Dessert Pizza

When it comes to pizza, there’s only one way to do it in the Redpath Test Kitchen: it’s got to be for dessert! This recipe is the perfect thing to serve alongside some of your favourite toppings - you could even make a party out of it. Chocolate chips, toasted coconut, strawberry jam and more! How will you decorate your slice?

INGREDIENTS

For the crust:

  • 1 ¼ cups (156 g) all-purpose flour
  • ⅓ cup (60 g) cornmeal
  • ½ tsp (3 g) baking powder
  • ½ tsp (3 g) salt
  • ½ cup (112 g) unsalted butter
  • ½ cup (60 g) Redpath® Icing Sugar
  • 1 large egg
  • 1 tsp (5 ml) vanilla extract

For the toppings:

  • ½ cup (113 g) cream cheese, softened
  • ½ cup nut or seed butter of choice (we used peanut butter, but any type will work)
  • ½ cup (60 g) Redpath® Icing Sugar
  • 1 tsp (5 ml) vanilla extract

INSTRUCTIONS

For the crust:

  1. In a large bowl whisk together the flour, cornmeal, baking powder and salt; set aside.
  2. In a separate bowl, beat the butter with an electric mixer on medium speed until smooth. Reduce speed to low and add the Redpath® Icing Sugar. Increase speed back to medium and beat until pale and fluffy; about 3 minutes.
  3. Beat in the egg, followed by the vanilla extract.
  4. Stir in the dry ingredients with a wooden spoon. Gather dough into a ball, wrap in plastic and chill for 30 minutes.                                        
  5. Grease or line a baking sheet, or a pizza pan, with parchment paper.
  6. On a lightly-floured surface, roll out chilled dough into a 12 inch (30.5 centimetre) circle. Transfer to prepared baking sheet.
  7. Fold the outer 1 inch (2.5 centimetre) towards the centre of the dough. Pinch to create a ½ inch (1 centimetre) lip around the edge of the dough.

  8. Prick the dough all over with a fork and place in freezer for 20 minutes.
  9. Preheat oven to 350°F (180°C). 
  10. Bake crust in oven until golden brown; 20 to 25 minutes.
  11. Remove and cool completely on the baking sheet.

For the toppings:

  1. Place the cream cheese, nut or seed butter, icing sugar and vanilla in a large bowl. Beat with an electric mixer on medium speed until completely smooth. 

How to assemble the Dessert Pizza:

  1. Spread the cream cheese topping evenly onto the cooled crust and decorate with desired toppings - we used mini marshmallows, sprinkles, chocolate candies, banana, coconut and chocolate sauce!
