- 1 recipe buttercream (of your choice)
- Large marshmallows
- Shredded coconut
- Heart-shaped nonpareils or jellybeans or candy-coated chocolate eggs

Stand mixer with paddle attachment OR hand mixer with large bowl

Chef’s knife OR paring knife
Instructions
Step 1
Make one batch of the Lemon Cupcake recipe according to instructions.
Step 2
Make one buttercream recipe of your choice.
Step 1
Pipe a mound of buttercream onto the completely cooled cupcakes.
Step 2
With a sharp chef’s knife, slice marshmallows diagonally in half (see Chef’s Tips).
Step 3
Dip the cut ends into the shredded coconut and place the “ears” onto the mound of buttercream.
Step 4
Carefully place a heart-shaped nonpareil, jellybean, or chocolate egg onto the front of the mound for the bunny’s nose.
