Cinnamon Apple Dessert Poutine

For the Sweetened Cream Cheese:
Place cream cheese, Redpath® Golden Yellow Sugar, and vanilla extract in the bowl of a stand mixer. Using the paddle attachment, beat until combined (alternatively you can use a large bowl and a hand mixer). Refrigerate mixture until needed.
For the Apples and Caramel Sauce:
Melt 1 tablespoon (14 g) butter in a heavy-bottomed frying pan over medium heat. Add apples and cook, stirring often, until apples are slightly softened and golden; 4-5 minutes. Stir in cinnamon and cook for an additional minute. Remove to a bowl and keep warm.
Add remaining butter to pan along with the Redpath® Dark Brown Sugar. Whisk until sugar dissolves and mixture resembles a thickened liquid; 4-5 minutes. Carefully whisk in heavy cream and vanilla extract. Transfer to a measuring cup or a bowl with a spout for easy pouring.
Divide cooked apples between serving dishes. Place spoonfuls of chilled cream cheese to mimic curds over the apples and drizzle with caramel sauce; serve warm.

* For an elegant twist, use softened goat cheese in place of cream cheese.
* If you’re not a fan of Granny Smith, substitute your favourite baking apple, like Cortland.
