Sweet and Spicy Nori Crackers

Preheat oven to 350°F (177°C).
Place nori on a rimmed baking sheet. Place in preheated oven and bake for 5-7 minutes, or until it starts to brown. Tear into small pieces and place in the bowl of a food processor. Using the pulse setting, pulse nori until it resembles large crumbs, set aside.
Line a 11 x 16 ½ inch (28 x 42 cm) baking sheet with overhanging parchment paper; lightly grease paper. Place crackers in a single layer on parchment so they cover the entire baking sheet.
In a small pot set over medium heat melt together Redpath® Golden Yellow Sugar and butter. Bring mixture to a boil, reduce heat and simmer, stirring often, for 5 minutes. Stir in garlic chili paste, soy sauce, and sesame oil; boil for an additional 5 minutes. Immediately pour over prepared crackers and spread into an even layer.

Place in oven and bake for 7-10 minutes. Remove from oven and carefully shift any crackers that have moved back into place with a wooden spoon. Sprinkle with shredded nori and sesame seeds.

Let cool completely then crack into desired sizes and store in an airtight container in the fridge for up to 4 days.
