Orange Vanilla Curd

How to prepare

1. Slice vanilla beans lengthwise and scoop out seeds into medium sized tempered glass bowl. While slicing the vanilla beans use the dull side of your knife with firm pressure for best results.

2. Zest and juice oranges. Add to glass bowl.

3. Whisk together eggs, orange juice, and zest, Redpath® Granulated Sugar and vanilla bean and pod in the glass bowl placed over a saucepan of simmering (not boiling) water.

4. Constantly stir the mixture to prevent curdling, until the mixture becomes thick enough to coat the back of a spoon. This should take about 10 minutes.

5. Remove from heat and immediately pour through a fine mesh strainer to filter out orange zest, vanilla pod, and any possible lumps

6. Add the butter and whisk into the mixture until it has melted.

7. Allow the curd to cool. It will thicken as it cools. Cover immediately and refrigerate for up to a week.

CHEF'S TIPS

Chefs Tip

  • Put your oranges under running hot tap water for 10 minutes. This will help you get more juice out of them.
