Coconut Chocolate Chip Sandwich Cookies

How to prepare:
1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. Cream together the butter and Redpath Golden Yellow Sugar until light and fluffy.
3. Add the egg and vanilla extract, beat well.
4. Sift together the flour, baking powder, baking soda.
5. Add dry ingredients to the creamed mixture, folding to combine well.
6. Fold in chocolate chips and coconut.


7. Drop by rounded teaspoonfuls onto lined baking sheet and bake for 10-12 minutes. Let cool on the sheet for 10-15 minutes before transferring the cookies to a wire rack to cool completely.


1. In a small saucepan, over low heat, heat the whipping cream to scalding.
2. Add in the chocolate chips. Stir constantly until the chocolate chips have completely melted.
3. Set aside to cool.
4. Allow ganache to cool to lukewarm before using. When lukewarm, spoon onto a cookie then top with another cookie to create a sandwich.
