Frostings 101: Vegan Frosting

Good vegan frostings can be hard to come by, but this one is both simple, easy, and flavourful. The coconut oil gives it a lovely flavour, and this frosting tastes great on our favourite vegan vanilla cupcakes.

INGREDIENTS

What you need:

  • 1 cup (250 mL) coconut oil, at room temperature
  • 2 cups (500 g) Redpath Icing Sugar
  • 1/2 tsp (2 mL) vanilla extract

INSTRUCTIONS

How to prepare:

1. Using handheld beaters, a stand mixer, or a wooden spoon, beat the coconut oil and vanilla until smooth and creamy.

2. Add 1/2 cup (125 g) of icing sugar at a time, beating well after each addition.
