Chocolate Coconut Milkshake

With a kiss from the tropics, this rich and chocolatey milkshake is a great way to celebrate the return of sunshine in the Redpath Test Kitchen! Make sure to use only the best chocolate ice cream you can find - it will truly help the flavour to shine through.


What you need

  • 1 3/4 Cup (1 400 ml can) of coconut milk
  • 1/4 cup (50 ml) Redpath® Icing Sugar
  • 1/4 - 1/2 cup (50 - 125 ml) milk
  • 3 - 4 scoops chocolate ice cream


How to prepare

1. Place the can of coconut milk in the fridge overnight, making sure that it's standing upright. Remove it from the fridge, open the can and scoop out all the coconut fat into a bowl (it will have separated in the fridge). Discard the leftover liquid.

2. Whip the coconut on high speed, with beaters, until fluffy and creamy. Add the Redpath® Icing Sugar and continue to beat until it's been well-incorporated.

3. Add the coconut whipped cream to a blender, along with the ice cream and 1/4 cup (50 millilitres) of milk. Blend on high until smooth, then taste. If it's too thick for your tastes, then add the remaining milk and blend again until smooth. Serve immediately and enjoy! Top with toasted coconut flakes and chocolate shavings for an extra decadent touch.
