Blackberry Mint Jam

This jam is a delightful addition to the breakfast or brunch table. The blackberries give it just an edge of tartness while the mint adds a refreshing little zing. Note: We love using our Redpath Quickset for Jam as it has pectin already added, so jam making becomes a real cinch.


What you need:

  • 3 1/2 cups (875 mL) crushed blackberries
  • 1 kg bag Redpath Quickset for Jam
  • 2 tbsp (10 g) fresh minced mint leaves
  • 2 tbsp (30 mL) lemon juice

How to prepare:

1. Wash the blackberries, then pat dry gently with a towel. Transfer them to a large, heavy-bottomed pot, and crush with a wooden spoon or potato masher.

2. Mince the fresh mint leaves very finely, then stir together with a few spoonfuls of the Quickset. (This will allow the flavour of the mint leaves to be more evenly distributed throughout the jam.)

7. Mix mint leaves with Quickset

3. Add the mint mixture, the remaining Quickset, and lemon juice to the crushed blackberries and stir together.

8. Add Redpath Quickset to mashed blackberries

4. Bring to a full rolling boil over medium-high heat. Continue to boil over medium heat for 4 minutes.

10. Stir everything together and bring to a boil

5. Remove from heat and skim off any foam from the top.

6. About five minutes after removing from the heat, fill sterilized jars with jam up to 1 cm of the top. Seal, label, and let set for at least 24 hours before using.
